Warrigal Greens
Warrigal greens, also known as New Zealand spinach or Botany Bay spinach, are leafy greens native to Australia and New Zealand. These nutrient-packed greens offer several health benefits. Rich in vitamins A, C, and E, they provide antioxidant protection and support a healthy immune system. Warrigal greens are an excellent source of dietary fiber, aiding digestion and promoting a healthy gut. They are also packed with minerals like iron, calcium, and magnesium, which contribute to strong bones and overall well-being. They are best to be blanched or heated prior to eating!

Macadamia and Warrigal Greens Pesto
Ingredients:
- 4 big handfuls of fresh Warrigal Green leaves 
- ¾ cup fresh basil leaves 
- ½ cup shaved parmesan cheese 
- ½ cup macadamia nuts 
- 1 teaspoon of salt flakes 
- 1 cup olive oil 
- Juice from ½ a lemon 
Directions:
Preparing the greens:
- Blanch the Warrigal Greens in boiling water for 1 minute to retain their vibrant color. 
- Strain the blanched leaves and rinse under cold water. 
- Squeeze out excess liquid from the leaves to remove moisture. 
Making the Pesto:
- In a food processor, combine the blanched Warrigal Greens, basil leaves, macadamias (toasted or roasted if preferred), parmesan cheese, and half of the olive oil. Blitz for 30 seconds. 
- Gradually add salt and lemon juice while slowly pouring in the remaining olive oil. Blitz until reaching your desired texture. 
- Let the pesto sit for 10 minutes, then taste and adjust seasoning and lemon juice according to preference. 
- For storage, freeze the pesto in portions or ensure it is topped with enough olive oil to maintain consistency when refrigerated.
